Fondants
A fondant a confection used as a filling or coating for cakes, pastries and candies/sweets and is by definition a cooked over saturated sugar solution seeded with microcrystals.
The fondant is stable over time due to the low water content and the amount of crystals incorporated under beating during the late production stage. The quality of the fondant is judged by its smoothness and uniform crystal structure.
Fondants are produced with sugar or sugar in combination with dextrose.
