Fermented products

Fermented products are obtained by a controlled fermentation of milk, cream or other milk derivatives with a specific starter culture. The result of the fermentation is a characteristic flavour due to the breakdown of lactose and other components. In addition, the acidification insolubilizes the casein which creates a network. This network gives the product a certain viscosity and body. Products in this category include e.g. yoghurt, fermented milk drinks, and fresh cheese.
