Whole muscle
Whole muscle fish products are fish products with visible fish flesh particles exceeding 5 cm in size or whole shellfish. To combine with other ingredients, fish and shellfish are often soaked, tumbled or injected with brine solutions containing the active ingredients. Typical products: smoked salmon fillets, shrimps, battered and breaded fillets, formed products or portions from blocks.
